A landmark study out of the University of Texas in 2004 analysed nutritional data from the US Department of Agriculture from both 1950 and 1999. The researchers looked at the vitamin and mineral content of 43 different vegetables and fruits.

They found “reliable declines” in the amount of protein, calcium, phosphorus, iron, riboflavin (vitamin B2) and vitamin C in the data from 1999.  

There have been several studies that have confirmed that our veggies and fruit have lost a lot of the goodness our bodies need to stay healthy. In another study, the researchers concluded that you would have to eat eight oranges today to get the same amount of Vitamin A your grandparents got from eating one orange.

New breeds and varieties of crops continue to be genetically produced to provide greater yield, pest resistance and climate adaptability. This allows the crops to grow bigger and more rapidly, but in the process, they've lost their ability to absorb nutrients from the already nutrient-depleted soil they're grow in.
