How does the Paleo autoimmune protocol work to treat autoimmune disease?

The Paleo autoimmune protocol works to reduce inflammation in the intestines. Many elimination diets are not complete enough and often do not remove immune triggers that promote inflammation in the gut. 
 
The Paleo autoimmune protocol works to calm inflammation in the gut and also calm inflammation in the body. And while autoimmune disease can never be cured, it can be put into remission. Plus, this diet is geared toward healing the intestinal mucosa and supporting low inflammation in the body that can temper the fires of an autoimmune flare-up. 
 

What does the Paleo autoimmune protocol allow and disallow you to eat?

The Paleo autoimmune protocol allows you to eat the following:
  • Vegetables (except nightshades);
  • Fruits (limit to 15-20 g fructose per day);
  • Coconut products (like coconut oil, manna, creamed coconut, coconut aminos, canned coconut milk and shredded coconut, but with no additives like guar gum and carrageen or BPA lined cans);
  • Healthy fats (like olive oil, coconut oil, avocados, lard, bacon fat and cultured ghee);
  • Fermented foods (like coconut yoghurt, kombucha, water and coconut kefir, and fermented vegetables);
  • Bone broth;
  • Grass-fed meats;
  • Non-seed herbal teas;
  • Green tea;
  • Vinegars (like apple cider vinegar, red wine vinegar, and balsamic vinegar, but with no added sugars);
  • Natural sweeteners (like honey and maple syrup);
  • Herbs (like basil tarragon, thyme, mint, oregano, rosemary, ginger, turmeric, cinnamon and edible flowers); and
  • Binders (like grass-fed gelatin and arrowroot starch).
 
On the other hand, the Paleo autoimmune protocol doesn’t allow you to eat:
  • Nuts (like nut oils like walnut and sesame seed oils);
  • Seeds (like flax, chia, pumpkin, sunflower, sesame and culinary herb seeds like cumin and coriander);
  • Beans and legumes (like all beans like kidney, pinto, black as well as soy in all its forms);
  • Grains (like corn, wheat, millet, buckwheat, rice, sorghum, amaranth, rye, spelt, teff, kamut and oats);
  • Artificial sweeteners (like xylitol, stevia and mannitol);
  • Dried fruits;
  • Dairy products;
  • Processed foods;
  • Alcohol;
  • Chocolate;
  • Eggs;
  • Gums  (like guar gum, Tara gum, Gellan gum and Gum Arabic);
  • Nightshades (like tomatoes, potatoes, peppers, eggplant, paprika, mustard seeds and all chilies including spices);
  • Vegetable oils (however olive oil, lard, palm oil, cultured grass fed ghee and coconut oil are permitted);
  • Culinary herbs from seeds (like mustard, cumin, coriander, fennel, cardamom, fenugreek, caraway, nutmeg and dill seed); and 
  • Tapioca.
