You probably know that Vitamin K plays a key role in helping your blood clot, preventing excessive bleeding. But for the first time ever, a study is showing a relationship a relationship between vitamin K and diabetes risk.

According to a study published in the journal Diabetes Care, people who get plenty of vitamin K from food are 20% less likely to develop type II diabetes.

Although researchers indicated they’re not sure what’s at the heart of the relationship, they suspect it “has to do with evidence that vitamin K reduces inflammation, which may improve the body’s use of insulin,” writes Christine O'Brien in Nutrition & Healing.

Vitamin K comes in two natural forms. Vitamin K1 is found in green leafy vegetables like spinach as well as some vegetable oils. Vitamin K2 is found in meat, cheese and eggs.

While both were linked to a lower diabetes risk in the study, the relationship was stronger with vitamin K2.

How much vitamin K should you be eating?

Study participants with the highest intakes of K consumed between 250 and 360 micrograms of total vitamin K each day.

Caution: If you’re going to add K2-rich meats and eggs to your diet, make sure you’re eating free range and organic for the best possible health benefits.
