This fresh and healthy Mediterranean salad only takes 20 minutes to toss up!

Not only is this fresh and tasty Mediterranean salad more green (or environmentally-friendly), it's also way better for you! Plus, you can pack the ingredients perfectly into a mason jar - it's full of nutrient-dense vegetables, good-for-you fibre and energy-boosting protein.

Fresh and healthy Mediterranean salad in a jar recipe

Serves: 1
 
Ingredients for the Dijon balsamic vinaigrette:
  • 4 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • ¼ cup plus 2 tbsp extra virgin olive oil
  • Sea salt and black pepper to taste
 
Preparation for the Dijon balsamic vinaigrette:
  1. Add the vinegar, mustard and extra virgin olive oil to your food processor and pulse until emulsified.
  2. Add sea salt and black pepper to taste.
  3. Set aside.

Ingredients for the Mediterranean salad:
  • 2 tbsp Dijon balsamic vinaigrette
  • ¼ cup cucumbers, chopped
  • ¼ cup Kalamata olives, pitted
  • ¼ cup artichoke hearts, chopped
  • ¼ cup cannellini beans
  • 2 tbsp sun-dried tomatoes, chopped
  • 100 g organic rotisserie chicken breast, shredded
  • 1½ cups organic spinach
  • 1 tbsp basil, shredded
 
Preparation for the Mediterranean salad:
  1. Add 2 tablespoons Dijon balsamic vinaigrette to bottom of 1 l Mason jar.
  2. Add the cucumbers, olives and artichoke hearts on top of the dressing.
  3. Add the cannellini beans on top of the vegetables.
  4. Add the sun-dried tomatoes on top of the cannellini beans.
  5. Top the sun-dried tomatoes with chicken.
  6. Add the spinach and basil on top of the chicken.
  7. Store in the fridge until you’re ready to eat it. Then shake the jar, pour the salad into a bowl and enjoy!
